Sous vide method

This would be great to use, maybe alternating with some lightly sautéed meats that are more raw in the middle.

Only problem with this method is that it often uses plastic for cooking the food.
 
Oh, great point, Dr. Jeff. I think that lightly cooking the outside in a pan if you are worried about bacteria is the best.

If I ate out more I would need to find out if the chefs did a lot of sous vide!

Yes, sous vide is quite commonly used by restaurants, special for meat dishes such as steaks and fish.
