Black Bean Brownies
1 – 15oz can of black beans drained & rinsed very well
2 tbsp cocoa powder
1/2 cup quick oats
1/2 cup honey or maple syrup
1/4 cup coconut oil or vegetable oil
2 tsp baking powder
1/2 - 2/3 cup chocolate chips
Preheat oven to 350. Combine all ingredients except chocolate chips in a food processor and process until completely smooth. Stir in chips. Pour into 8 x 8 pan. Top with additional chips. Bake 15 – 18 minutes. Cool at least 10 minutes before cutting. (chocolatecoveredkatie.com)
I'm thinking of cutting down the honey or maple syrup to ¼ cup as I think the chips more than make it sweet enough.
